Shoji Nagai’s quest for the perfect water to provide the base on which t create the perfect sake led him all over Japan, eventually bringing him to Kawaba in 1886. It is there where he discovered a spring with clean, mineral, voluptuous and faintly sweet quantities which give our sake its elegant character.
